Bai Mu Dan or “White Peony” refers to a special white tea grown in Fujian. White peony consists of the smallest buds and the first two leaves that are picked from each new shoot. The leaf pluck method is what gives Bai Mu Dan a stronger flavor. These tender buds and leaves are then carefully dried by the best method suited to the weather conditions, namely sun-dried, naturally dried indoors, or machine dried. As a white tea, it is only very lightly fermented. The grey leaves encircle a silver core, like a flower.
The color of the brewed liquor is a pale orange-yellow; the fragrance is sweet and fresh as the leaves unfurl. The tea doesn’t fully reveal its secrets until tasted. White Peony has a perfect, lightly sweet flavor that is akin to sitting by a serene lake at sunset. It is a light and delicious tea that is loved in south China.
